We recently collaborated with our lovely pal Jane from the Kintyre Smokehouse to recreate a delicious recipie given to her by two of her devoted customers, Geri and Steve.
This would make a delicious Christmas Day starter and although it takes a few days to prepare is easy-peasy to create and will wow your guests!
Ingredients
1.5kg Kintyre Smokehouse smoked salmon
100ml Kintyre Gin
200g salt
100g castor sugar
Method
Brush the salmon liberally with half of the Gin but be careful not to drown it.
Mix the salt and sugar and coat the salmon in the mixture. Pop into the fridge in a plastic box with a lid for at least 3 hours or overnight. Don’t worry if you forget about it!
Take out and rinse well in cold water and then dry.
Pour the remainder of the Gin over the salmon and place back in the fridge over night again.
Slice thinly and serve.
It pairs beautifully with a zesty mango salsa and a cheeky Kintyre G&T on the side!
